Terry and I whip up a quick and wholesome egg and potato dish that is detox friendly.

Dr. Willard’s Spanish Style Frittata

Ingredients
Olive Oil, to coat skillet
1 medium potato, cut into small cubes
4 eggs, slightly beaten
Salt & Pepper to taste
Chopped Parsley as garnish

Directions
1. Heat oil over medium heat in an 8 inch skillet
2. Add diced potatoes and cook until tender, approx 15 minutes
3. Remove potatoes from skillet
4. Mix together eggs with salt and pepper
5. Pour slightly beaten eggs with seasoning into skillet
6. Distribute cooked potato cubes over eggs
7. Cook for a few minutes until tortilla can be flipped
8. Flip and cook for one minute
9. Serve with parsley as garnish
